It depends on your budget but I think you will be disappointed with the Santika Hotel in Tuban. The rooms are very small and there are always a lot of kids.
I agree with Zabowskee and think the Hyatt at Sanur would be more to your liking and there are more water sports that side of the island.
Can't comment on Ubud have never stayed over night there.
Definately eat out, the price in hotels is more than double that of the local restaurants and not as interesting.
