The first thing I did when I got back from our Bali holiday was hunt out these recipes. I ended up buying a copy of the book Fragrant Rice by Janet De Neefe who rund Casa Luna at Ubud and her recipe for Nasi Goreng is as follows;
2 tbs. oil, 100g chicken (finely chopped), 3 small red shallots, 5 cloves of garlic, 1/4 leek 1/2 red chilli, 1 cup steamed rice, 1/2 cup finley chopped cabbage, 1/2 cup choi sum another version of cabbage), 1 Tbs tomato sauce, 1/2 tsp vinegar, 2 tsp soy sauce, 1/2 tsp fish sauce. Then pretty much cook chicken in wok, then add all ingredients one by one in listed order - continuing to stir fry until veggies are wilted. Top with extra fried shallots adn enjoy. This serves 1 person so alter ingredients accordingly.
