The ATMs always dispense local currency so you will always withdraw Rupiah. You can withdraw around 1 - 2 million rupiah each time, (select the 'other amount' button and type in your amount) but your bank will most likely charge you a fee each transaction, so withdraw more rupiah and less number of withdrawals.
You can cash your local currency at moneychangers and also the MRB. The Hotels rate is usually pretty poor, but convenient for some.
