Kim,
I am a diabetic and have travelled to Bali 10 times (8 as a diabetic), and have encountered no major problems. I carry a letter from my doctor to explian my needles, insulin etc., but have never been questioned about it. There is always plenty of food available, and you can purchase crackers, milk, anything you want in the many supermarkets around all the tourist areas. The only very minor problems I have had is that my jelly beans get very moist and sticky in the humidity, and I find carrying them in a zip lock bag helps. (This must sound very odd to non-diabetics) Also I find that either I eat less sugar or maybe the constant sweating lowers my blood sugar and I have had a few hypos, but I just adjust my insulin dosage accordingly, but nothing serious as I always have my jelly beans close to hand, and yes Coke (all cool drinks) and Diet Coke are available everywhere in Bali.
Don't worry and have a great time in Bali.
Regards
Anita
