Escapes unlimited in Orange Ca. offers packages to Bali on Cathay Pacific. 5 nights lodging of your choice(cost goes up as the lodging gets nicer) with subsidized stops in Hong Kong at rates a little higher than the $800 you mentioned just for the Hong Kong to Bali airfare. This is just one agent I know of, but I'm sure there are others. The key is flying with Cathay using Bali as your primary destination, and taking advantage of their layover program in Hong Kong.
