I liked Larry's suggestions, and would like to add a couple more.
Along with jackfruit, be sure to try the funny-looking mangosteen. Try one. Then you'll buy a kilo a day as I did. They are unlike anything else I've ever tried, but I could describe a taste like sweet strawberries and bananas combined, maybe...and in such a nice form for eating, sweet white wedges in a richly red husk dotted with festive yellow splashes. Crush the whole thing gently in your hands and open it. You can write back and thank me.
Also, try the "lumpia" (eggrolls) wherever you go. They're different from one place to another, but generally good and sometimes wonderful.
Larry may confirm that Arie's Warung in Ubud does them particularly well, with Arie's secret sauce.
Also, I miss pisan goreng, the fried-banana dessert. Once again it differs from place to place, but the Balinese bananas are different, too. The best I had was home-made for a family wedding party in a poor East-coast village. They were like warm, sweet cookies, and I ate too many without consequence.
