Foodie help needed

Hi all. Just finalising some restaurant bookings my trip in two weeks and I'm scratching my head a bit re where to make sure we dine (and make reservations for those that one must).

Now we are real foodies and love (as examples) Bambu, Sip, Pearl and Teatro Gastroteque in Seminyak - and Locavore in Ubud. Looking at reviews some of the high end degustation restaurants are getting some very mixed reviews and more noticeable many of the positive reviews (say for the likes of Blanco in Ubud) are people who have only ever posted one or two reviews.

My question is where are the 'must eat' places around Seminyak (happy to travel a bit) and Ubud - the real foodie places that leave memories for years (or at least a few weeks) in the way that Danielle in NYC did. Happy to pay plenty but only for a fantastic meal out and even happier to pay less for a pretty terrific meal out. Our tastes lean towards pan-Indo. (including Balinese), French and Italian but happy to mix it up a lot of and as needed.
