I too have had my concerns about prawns in Bali. I have been badly caught out a couple of times when the prawns were soft and mushy and I suffered the consequences severely. Shellfish needs to be treated with considerable care and I'm sure the more expensive restaurants do so, but some of the run of the mill eateries are not so careful. I have not had any issues with shrimps which they use in curried seafood.
