Tell your friend to bring some loaves bread from home and ask the hotel to put it in their freezer to be had with breakfast or for toasted sandwiches or hamburgers instead of the bun. Put name and room number on them.
I know that Watercress cafe has gluten free options and many of the other cafes have gluten awareness. The killer in Bali is the soya sauce which in most cases has gluten and is in a lot of the Balinese food.
