I posted same question last week. I have ordered a Post Office load and go visa card as suggested by a couple of people on here. It will take up to 10 days to arrive so I have emailed my hotels that were asking for credit card details and told them. They both said they are happy to hold the rooms. This way I plan to just load the card with the amount of $ I need for the deposits. We travel a couple of times a year and this is the first trip I have been asked for credit card details and passport info via email. Usually they have a secure website for booking. New hotel so I guess that is the reason.
