Given your comments I am assuming that you are comparing apples with apples ?? i.e. similar or same dishes you have had in the past from the same restaurants or are you just saying overall everything has been spiced down ?
I found on our last trip in August that most of the things I ate were still as good as always and some were even better than in the past but I will caveat that by saying that we did it at some regular joints and some new ones and that most of the new ones were pretty good.
Although I will admit that I did eat a few things that needed the samabl mata(?) and chopped chilli to get me excited.
I have never been let down by the traditional favourites at Batan Waru, Made's Warung, Yulia's Kitchen and a few of the little warungs.
I was impressed this time by the taste and spice of the traditional Indo dishes at the Gabah in Kuta. That was a new one for us and we will definitley be going back.
I just find now that there are more restaurants serving other than Indo food - has its pros and cons in my opinion.
