onboard I think is more about them being able to control how much each person drinks. Selling alcoholic drinks means they can also monitor intake, and refuse to serve more to someone over the limit.
For a plane crew the problem of drunk passengers is more than just having to control noisy and/or abusive passengers, and the mess that creates. There is also the risk of a passenger dying from the effects of excessive alcoholic intake, or locking themselves in the toilet, or vomiting over other passengers. It is hard to look after all your passengers if all your time is taken up with managing a selfish few who don't know how to behave responsibly.
And what if there is an emergency situation - would you want to be trying to get past someone who is staggering drunk and freaking out in an evacuation?
