any of the Alam Hotels - they are usually booked way in advance but they are very fast to return emails. Looka t their website under Alam Shanti. Very small and very authentic Balinese.
Just on the other side of the Monkey Forrest in Nyuh Kunning. Easy access by car without having to go into Ubud.
