As you say they asked for your passport, which they do!..good thinking to offer them a photocopy
We have been to Vietnam 3 times and stayed in at least 10 different hotels, and whilst some hotels took your details only, some photocopied and some held your passports.
In fact at one time we toured with a group of 3 couples and all forgot to pick up their passports when we checked out of the the Light Hotel , Nha Trang...luckily the receptionist ran us down before we caught our taxi to the airport.
