you will not get the same person and it is often up to the discretion of the operator or the shift supervisor to authorise changes. Pissing them off doesn't help though. I'm sure they can't not offer you a refund for services not provided and I agree with little john that if you don't accept the changes they should put you on a different flight without charge.
I'm not defending Jetstar but its interesting that after 6 successful trips it has only taken one to sway your loyalty.
