OK, so when we make our own Mojitos when we're on holidays I don't measure anything - I just throw in one of the small limes per person and one for the pot, a handful or two of mint & about 2 teaspoons of brown sugar per person. I put it all in the bottom of a plastic jug (bought upstairs at Bintang along with the knife & chopping board) and then "muddle" it with whatever I have handy (this time I've been using the plastic end of the bottle opener, have previously used the handle of a knife). Then I add ice, Barcardi and mix it around before pouring into a glass & then topping up with soda water to taste (you can add as much or as little soda as you like).
