If you're from Australia then just take AUD$. If you change rupiah before leaving home you'll get a terrible rate, so it's not a good idea. If you really need some when you first get there, the money changers at the airport will give you a better rate than anywhere at home.
If you change to US$ you will only need to change that to rupiah when you get there anyway, so you'll lose on the double exchange.
The currency there is rupiah and that is what most places will expect you to pay with. Some hotels or tourist places will accept US$ but everywhere accepts rupiah, and I've never actually needed US$ at any time on any trip to Bali.
