Having hosted both a wedding, and a 50th, parties in Bali, the best advice I can offer is to let people do their own thing. If you are staying in even "roughly" same accom, it is still a nightmare getting everyone organised on a "Bali" timetable. I have found that I have become a non appreciated tour operator, and have not been able to enjoy my time. Dont worry, people will have fun regardless, and you cannot please everyone.
The most I would suggest is to say "ok, we are going to dinner at "bla bla" tonite, see you there round 8, Ive booked for 6, if you all want to come, better book too. Or, we're going on a Bali Hai cruise, this is who you ring. You have to be a bit firm, I've been left waiting for stragglers for hours.
All sounds a bit grim, but big groups do have a blast, lots of friends lots of laughs, but take care of yourself too.
