Doesn't have to be a return - just a ticket out of Indonesia.

You could always buy a full priced ticket from Bali to, say, Singapore, KL or even East Timor or Darwin. Then, when it suits you, buy a cheaper ticket for wherever you want to go to, cancel the full price ticket & collect a full refund (minus booking charges).

We did this some time ago.

I have often flown to & from Bali using different airlines & I haven't been asked to show my onward ticket. Most likely you won't have any problems but as sure as eggs is eggs if you don't have a ticket out of Indonesia they will grab you - better to be covered.
