King Cole bar is hands down the best cocktail I've ever had anywhere.
The Lychee Martini at Hu'u bar in Seminyak is also a winner. I used to love the Pina Coladas at Poppies - but it has been quite a few years since I've ventured into Kuta so not sure how good they are these days.
