Email the Green School (just 30 mins drive from Ubud) to find out what nights their mepantigan performances are held. This is a combination of martial arts and dance in the mud.
The Green school also has tours of the school which is an amazing bamboo structure.
Ubud Royal palace - ask palace staff if there are any important ceremonies being held
If you like animals pop into BAWA's (Bali Animal Welfare Association) office to see if they'd like a volunteer to walk or wash the dogs. Volunteers are listed under Help Us on their website.
A good relaxing day trip is to Lake Bratan, then stop in Lovina for lunch, then onto the Brahma Vihara Ashrama Buddhist temples which is just outside of Lovina. No-one hassles you at this temple and if you climb the stairs to the top ( an easy climb) you'll find their largest temple with great views. On the way back to Ubud you could stop at Kintamani for Luwak coffee tasting
