Bain maries are good if they're properly temperature regulated but the trouble with many of them is that they don't keep the food hot enough, hence letting all sorts of bugs grow. I can't count the amount of times I've gotten lukewarm bain marie food in Australia, so I don't think I'd trust it in Bali at all.
