I've been fortunate to have not had the worst case senerio with food poisoning that you described but it is on my mind in picking places to eat and things on the menue. I have heard that daily specials are a way of clearing out things that have been around too long so unless it is a reputable and popular restaraunt/warung I avoid the "special." I avoid non-peeled fruits and vegtables eventhough they looks so amazingly delicious (especially lettuce) and depite a great craving for them after several weeks of going without. I think there is always an element of hoping for the best with food choices and where to eat and I'm sure getting sick like you described can make you very cautious about being cavalier in this regard. Since I have to face 20-plus hour plane ride home I definitely don't want a bad case of Bali-belly on the flight so I get more careful in the last few days.
