Sure the tourist hot spots have expanded but the village life still exists. With no social security regime these are important in maintaining the community fabric.
If you are ever in Ubud do a night trip to one of the village shows they put on and you will see a different side - the real side of Balinese life.
So you can go back in time but not many people want this and thus we have what we have.
Like India, Nepal or other similar places you just need to regear you head when you get there and accept it as they do.
Nothing of the above should be seen as a criticism of your post merely my observations.
