I've never seen any work out gear in Bali. You'd likely have to visit a sports store. DVDs - I did notice a few pilates DVDs at one store this year. If you were to ask, some stores would probably have what you want.
Carrefour is interesting, but since the earthquake and what I heard about the repairs, I just wasn't all that comfortable there this past trip. A better option (in my opinion) is Bali Galleria. Still has a Hypermart, but also has a Matahari and loads of specialty stores, plus food options. Only slightly further in the taxi, though traffic can be a little heavy depending on the time of day.
Yes, you still turn right outside arrivals to find the taxi window.
I've never used a tailor or done bike tours, so I'm of no help with those questions, sorry.
