If you can get a discounted price for Sobek I would advise you to book it in advance. Bali Discovery is a good agent and trustworthy so you'll have no issues with them.
Sobek GENERALLY don't offer heavily discounted prices on the street as they have the support of many of the larger agents and they don't want to risk upsetting them by having their clients discover they can buy tours, etc cheaper on the street.
