We too have been taking a 2 liter cask in each of our suitcases for a number of visits.
Last Friday, traveling in by myself, my bag was scanned and as it came through the scanner one of the customs officers walked over to me and asked for my declaration form.
He made me open my suitcase and inspected toiletries, clothing, and the cask of wine. He asked the value of the cask ($12), and let me through without charge adding "only 1 liter next time" ... So the story is everything is seen. It just depends on how close to the law the individual customs officer wants to act whether you will be charged or not.

I'll still take wine in but will declare next time.
