I just made the point that if the money goes to his Australian bank account with a mail to your daughter about what she will get for that payment, you effectively have a contract enforcable under Australian Law. She can suggest this option and he can transfer however much he needs to the Bali account.
I am in the villa business too and we use our company bank account in NZ and our credit card facility is through our NZ registered company which gives guests a sense of security.
Phone rates are cheap. Suggest to your daughter she ring him and get more details.
