I think that is the difference when it come to paying for meals etc. We have a lovely guy whom we have been friends with for quite a few years, so we always invite him for a meal, as we enjoy his company. We also pay what we want to pay, not the "rate". We can spare more money, so we pay him more.
Don't feel obliged if you hire some one you don't know well. If he does a good job, then a tip when the trip is finished, would be welcomed.
