I have visited the 'good' turtle place each time I do the dolphin experience - it is only a few mins from it and I ask the driver (and the others sharing the drop back to hotels) if its ok to stop and look, doesn't take very long - in July we saw a number of babies that had just hatched and were making their way to the surface. The dolphin land base also now has a shop for carved things etc and they were very reasonable prices.
Time to get things made is related to orders at the time but if you get leather items made they will drop them to you at Legian - if you are heading there after Sanur. My jbrs in archives tell where I like to get things made and so on.
I am heading to Sanur in 6 days (YAY)and will post later so keep reading here and there will probably be lots of ideas over the next month from various posters.
