During the wet season I'd be ultra careful & only eat feshly cooked food. And not seafood at all - often the fishermen can't get out to fish because of bad weather so restaurants are likely to have fish that could be a few days old. And so much stuff is washed into the ocean during the wet that bottom-feeders such as prawns & lobsters could be contaminated.
Also be aware that during the wet sewerage tanks can overflow into water bores - not a problem usually in hotels but could be an issue if the person serving you or cooking in a restaurant lives where this happens. If you are going in the wet, or at any time really, a Typhoid vaccination is a good idea (husband was in a remote place in Indonesia surfing in the dry season when there was a Typhoid outbreak - very worrying & it happens in Bali, too - search the archives here).
Ice is fine. I doubt that every restaurant washes vegies such as lettuce & tomatoes in Aqua so avoid salads. Always avoid buffets where the food sits over bain maries for yonks - esp chicken. Morning brekky buffets should be fine as a there is usually a high turnover.
ALSO, I now never eat white rice in Bali - it can be a source of food poisoning - google for more info. Eat fried rice instead.
Sorry to be a scaremonger but it does pay to know this stuff. And you can still have a great time & eat lovely meals.
