The cattle you saw exported to Indonesia on the "4 Corners" expose is not necessarily the beef you eat in a Balinese restaurant.
The live cattle that are exported to Indonesia are not suitable for the Australian market by virtue of the fact that they are "lean and mean"...in other words the cattle do not have enough fat on them to satisfy the Australian consumers market... to put it simply they are TOO lean!...too lean = tough to eat.
The Indonesian live cattle market is tuned to the"lean and mean" principle.
Anyone in the cattle business in Australia understands that for quality export beef it must have a certain amount of selvage (fat) to maintain tenderness.
A lot of beef and lamb sold to restaurants in Bali is processed in Aus, NZ etc and on sold in cartons!
