I decided to leave it & wait until our trip was approaching before booking & paying but there was no availability weeks in advance.
I tried to book 2 weeks ago for any day between 22 Dec and 9 Jan and have been told they are booked out until 10 Jan at 3pm. We leave that evening so we've missed out :-(
If it is something you want to surprise your new husband with, just book it to avoid disappointment.
