Definitely only standing on a platform in the water (around chest deep for me, being 5'1-ish). There is no swimming with them, just interaction - getting them to do tricks etc. You do get to touch them, just not leave the platform.
The guide we had at Sanur said it's cruel to the dolphins to have them pull you around by the fins etc. He had us feel the dolphin's heartbeat after doing certain things, like jumping out of the water etc.
