For the Safari park I recommend Jack the driver who will also act as tour guide through the park -you wont miss a thing with him -search the forum for his number and more references.
White water rafting will be fun for the boys (longish car ride though so take something for the trip)
Same with Bike riding which my kids loved -down from the volcano outlook and through the villages.
Watersports are good but be careful with the jet skiis as they can be dangerous if too crowded.
The boat tours with the fun pontoons are good, waterslides, lunch, banana boat rided bit expensive but fun day out
