You need to organise to unclock the phone with your carrier before you go.It should be free and you will need to then sync or restore with itunes to complete the process.
As skiggy said you can get sim cards on the 2nd floor of Hardy's. They will set the whole thing up and write down the numbers to put at the front of the number to ring back to australia so it is super cheap.
