Cocoon would be perfect [see the review on BALIEATS[they made it the best new restaurant of 2010]. Boss man is Australian from Melbourne, Anthony [Italian surname an Aussie Italian ex Carlton]. He is a great restaurateur and woudl do something specuial for you if you meet and ask. He was bossman who opened kudeta many years ago, Cocoon much better.
For Lombok check the GOTOLOMBOK web site, it has it all, restaurants, hotels, spas and activities. We have used it many times and I see that it is now the only recommended reading on Trip Advisor. I think it is done from Bali, a bit more professional than the local ones.
