If you would like to see the real Bali, do one of the bike rides if you are able to.
There are some great ones around. We did the Bali Baik Bike tour.
It takes you through rice fields, villages, comunities and you get the opportunity at the end to have a home made balinese feast in the family compound.
We had been to Bali 3 times previously but Mr Bubba and I felt that with the Bike ride we saw more of the real Bali than we had on our previous trips. We really loved stopping and chatting to the locals and the children.
Also, if you go to the Monkey Forest, make sure you go down the stairs to the Temple (of the Dead, I think it is called). It is amazing.
As for, is Bali safe? Not there so can not comment but I can say that we returned after the Bali Bombings and previous quakes and would do so again. However, certainly understand your concern.
We always make sure that we register with the appropriate authorities before we leave, have copies of our passports in various places thru our luggage and leave copies with our family members.
