We travelled in May with my friend who has Coeliac and we ran into no issues whatsoever...in fact, most of the places we went to for meals couldn't do enough for her. We were based in Seminyak so the following places are all around there...Blue Ocean, Zanzibar, Biku, Made's Warung, Queen's Tandoor and Potato Head (in fact, the head manager here worked in the US for 5 years and was VERY aware of the dietary issues and came back from the kitchen with a whole list of options for her). We then shopped at Bintang Supermarket and Carrefour and there was a wide range of GF options for her there. Carrefour in particular has good options for non dairy and gf diets. You'll also find that most of the flour used in meals in Bali are made from Rice Flour (especially pancakes etc). Always good to check and your friend can always carry an explanation in Indo from the Coeliac Society if it helps. Oh, I almost forgot...we were there for Mother's Day and had our special breakfast at La Lucciola - they have gluten free options and they also bake fresh gf bread which was yummo!
