I haven't done it myself but have seen a superior room at GVC set up that way, It was squishy but do-able - barely. They put a mattress on the floor at the base of the two single beds. It really left very little room at all for suitcases etc.
It wouldn't be my first choice, but if you don't mind climbing over the bed on the floor to get to the fridge etc, I guess it would be ok.
