I saw car seats (and prams) at Carrefour last year but keep in mind they may not meet Australia's strict safety standards. They were close to lmil Rp.
You may even find them at Ace Hardware or Makro.
Most cars have 1 or 3 anchor points, even vans and utes. You do not need to have the seat fitted by a professional as you would well know. As long as you take the appropriate straps (to lengthen if need be eg if the anchor point is on the floor/roof like in vans/4WD) and that the vehicle has legal seatbelts (which it would or they couldn't hire them) you will be right.
You shouldn't have a problem fitting a car seat into any of the hire cars but to alleviate any angst, I would take your own anchor point latch (yes the one that bolts to the vehicle) incase.
Nothing wrong with taking a secondhand seat Willow as long as it still meets safety standards.
Taking your own may be feasible and depending if the child has their own paid seat, some airlines allow you to take these on board for them to sit in.
