Depending on the time of your flight he will probably sleep for much of the flight, so not much point breaking it up - you're just multiplying the chance of delayed flights, etc. Better just to get it over with in my opinion.
Not sure about hotels, sorry.
If you are going to use a popular nanny, even just for night babysitting, I'd book in now.
The baby hire places are great.
