i've no idea how old your kids are or what they enjoy doing, but i'll have a go at answering your question from our family's perspective. In 2009, we stayed out at campuan and went for walks each day. the kids were 9 and 7 at the time and loved seeing all the things as along the way.
one day it was the election, so we got to talk to people in one village as they added up the votes and chatted about the results.
one trip we got hopelessly lost and ended up at an amazing market at a crossroads after scrambling along the sides of the ricefields, like playing a hedge maze without the hedges, before finding the river and watching the rafters. it was hours before we found our way home!
somehow the trips where everything went hopelessly wrong were the most fun.
they also liked sitting at little restaurants having juices and choosing treats at the roadside milk bars: you know, those little packs of "chips" which have all sorts of fun flavours.
we brought with us a travel monopoly set, chess and loads of books, so that they could spend some of each day with down time, as there was a lot of sensory stuff to process. They also maintained a journal.
we had chosen a place with a pool, but this was unnecessary as the water and weather were too cold in july up in Ubud. For me this trip had been eye-opening, as it was the first time i had been to Ubud since 1986, so they had to put up with a lot of : oh my god, there wasn't even electricity when i was last here! type comments, i've kept my email open, if you want to contact me
