We didn't book accommodation last year - just walked in. Found the flexibility fantastic, prices also good. However, we do tend to stay Amed, Candi Dasa, Tabanan areas which are not busy. I think I would always ensure accomm in Kuta/Legian/Sanur booked in advance.
