Look up Waka Resorts and cruises. They do a landrover tour in the countryside. It may be what you are looking to do.
Maybe a visit to the Botanical Gardens and the Candi Kuning Markets.
Also if you are bike riders, don't forget the cycling tours that may operators run.
Ubud has many museums and art galleries to fill in your time and night time cultural performances in the surrounding villages and the Ubud palace.
Not unseen but no watersports or shopping involved. Good luck
