Sounds like my first trip to Bali, nearly turned me off travel but I'll be there in 6 days time for trip number 7. I think I paid about $50 Aus to have my hair plaited, hated it and took it out an hour later.
There are some good drivers/guides listed on this forum if you do a search, I've used various ones in the past and all have been good - no ripping off but various levels of english and some offer more suggestions than others. If you are really worried, I would take an organised tour, you might have to go to a few shops but at least you know the price is the price - your hotel should be able to organise a tour or one of the booths.
