Ubud is a bit sleepy at night. You could fire a shotgun down Monkey Forest Road at midnight and you wouldn't hit a soul.
In saying that, there's always a few restaurants/bars that kick on a little bit.

Your best bet for something a bit more rowdy is the Jazz Cafe (for live jazz music) or Cafe Havana for Cuban/latino/salsa evenings.
Both close at midnight.

Lobong Cafe (on MF Road) has music most weekend nights.

On the other side of Ubud in Campuhan (jalan Sanggingan) is a place called Ozigo, but I would only have a look if you're staying that side of town.

If you're only in Ubud for 2 nights, have dinner one night at Cafe Havana and then stick around until close and the same at Jazz Cafe the other night.

Hope this helps.

Might bump into you, we're there in June also (5 nights Ubud and 12 nights Sanur).
