you are staying in Sanur. Why not get the proprietor of the place you are staying at take you to the Jimbaran Seafood Markets.
At 6.30-7 AM it is only a 30 minute drive. It is a very interesting place. It is a really good photo opportunity as the fresh products are unloaded from the fishing boats, weighed and then distributed to be displayed for purchase.
The jumbo prawns are about $12 a kilo and the price of fish varies greatly depending on the variety selected. Fresh squid tubes are in plentiful supply. As are Moreton Bay bugs, mud crabs and crayfish.
The crayfish is mostly head with only smaller tails and as such are not really an economical purchase.
Maybe the staff at your hotel could show you how to make ikan pepes (spicy steamed fish wrapped in banana leaf) and even cook squid the way it should be cooked-not like the crap that is served in most restaurants).
