Flew Jetstar from Bris - Dar - Denpasar last year. Darwin airport with 2 little kids = torture! I'm sure if we did this flight again and was prepared more it wouldn't be so bad, but we didn't have many things for the kids to play with (2 1/2yr and 1yr) for our 4hr stop over.
Luggage you don't need to collect and check in again, because it's a connecting flight you say goodbye to it from you checkin in Melb.
Darwin airport are very security conscious. You will get you hand luggage search by someone before going through passport check, and also the usual X-ray screening. You much have all liquids in a clear bag (provided at airport) amongst other things. Darwin airport is very small and not a large amount to do, there is a redrooster, bar and newsagent before going through security.
As for inflight entertainment it can be purchased but it's only around 3 hours from Darwin to Bali. You can take drinks on your first flight but from Dar onwards it's regulations of a international.
