with the "expert" on Balinese cooking - Heinz von Holzen who wrote the "Food of Bali" the difinitive recipe book on Balinese cooking. I have done the Aneka cooking classes 3 times and they are also pretty good, but for the great venue I would recommend Bumbu Bali.
